Crustless Broccoli & Gouda Quiche

I love a good quiche so I thought I would share with you one of my favorite, hassle free recipes. What I love about a crustless quiche is that it feels more airy and its a tiny bit healthier.  Feel free to serve this up at your next brunch!

Serves 6
Prep time: 7 minutes
Cook time: 1 hour

4 medium eggs
1/4 cup of chopped onions
1/4 cup of chopped green pepper
1 cup of milk
1/2 cup of shredded gouda
1/2 cup of parmesan
2 cups of broccoli
2 tblspoon of butter
salt & pepper to taste

1. Saute onions and green pepper in 1 tblspoon of butter until fragrant. Preheat oven to 350 degrees.
2. Use remaining butter to coat the bottom of pie pan. Add broccoli and sauteed vegetables.
3. In a separate bowl whisk eggs, add both cheeses (leave enough parmesan to top quiche), season with salt and pepper.
4. Pour egg mixture into pie pan, add parmesan on top and put in oven for 40-45 minutes.
